Ok. Just so you know…the beginning of October is my absolute favorite time of year to make soup! Everything is in season…it’s like a 3 week crossover of summer and fall where there’s still tomatoes but also butternut squash, there’s still corn and peppers but also Yams and leeks . This time of year, it’s bikinis in the morning and sweaters and mittens come evening time…the absolute best!
