Well guys, I just whipped up a fresh batch of gnocchi for this weeks Minestrone! These little potato dumplings will be headed in the soup with some simmered Peacock Farms tomatoes that are so sweet and flavorful you will not believe that they were grown in a greenhouse! Lucky Us! Heres whats cookin this week!
