You know what I love about March? Its the start of the artichoke season. As my favorite green food slowly creeps its way into the markets I am inspred to make a soup with it! Because they are still a little scarce, the artichokes will be a flavor in the soup,  sharting the spotlight with some potatoes and fresh spinach. Its so wonderful to see all these new veggies coming into the markets for the beginng of spring, look for fresh asperagus, arugula, radishes, artickokes, fennel (a powerful antioxidant and known to reduce inflamation) and celeriac. And look forward to seeing some soups containin these ingredients in the upcoming weeks.
